What our name means

Gumi Daega (九味大家)

九味구미“Nine flavors” + the city name Gumi

大家대가A house with a craftsman’s touch

Hello! We are Gumi Daega (九味大家), a shabu kalguksu restaurant in Hyeonggok-dong, Gumi City.

Gumi (九味) means “nine flavors” and also carries the name of our city, Gumi. Daega (大家) means “a house with a craftsman’s touch.”

We studied shabu-shabu and kalguksu from all over Korea to create a bowl that suits local tastes here in Gumi.

In our own words

Broth · Fresh noodles · Sauces

A deep broth, carefully simmered for 12 hours

Made with beef, vegetables and seafood and simmered for a long time, our broth has a deep, rich flavor. Enjoy the shabu-shabu first, then the kalguksu noodles, and taste how the broth changes.

Fresh noodles, made in-house

We add fresh noodles made in-house to the deep broth. Enjoy Gumi Daega’s own shabu kalguksu — chewy noodles in a richly simmered broth.

9 sauces, your way

We offer a range of sauces, including sesame, chili oil, soy sauce and yuzu. Mix and match them to your taste and enjoy the same shabu-shabu in many different ways.

Traditional kalguksu meets shabu-shabu

Step by step

Shabu-shabu first, then kalguksu

Enjoy the shabu-shabu first, then the kalguksu noodles, and taste how the broth changes along the way.

  1. Shabu-shabu

Cook beef, mushrooms and vegetables in the boiling beef-bone broth, then dip them in sauce.

  2. Kalguksu

Add the fresh, house-made noodles to the deep broth.

How to enjoy it

Beef Shabu-shabu 소고기샤브

  1. When the broth comes to a rolling boil, turn the heat to 5.
  2. Enjoy the thinly sliced sirloin with mushrooms and vegetables.

Dumpling Shabu Kalguksu 만두샤브칼국수

  1. Once the broth starts to boil, add the dumplings and turn over the sand timer.
  2. When all the sand has run through, they are ready to eat.

Seafood & Beef Shabu-shabu 해물소고기샤브

  1. When the broth comes to a rolling boil, turn the heat to 5.
  2. Once it boils, eat in this order: octopus → mushrooms → abalone → pen-shell scallop → crab.
  3. When you have nearly finished, add more broth and then the beef.

Good to know

  • The octopus comes already cooked, so you can eat it as soon as the broth boils.
  • Take the shell off the crab and save it for last — the longer it simmers, the more refreshing the broth becomes.

After years of restaurant experience at this same location, the owner launched this independent brand and runs it directly. Local produce, including soybeans and rice, is grown by the owner and used in the kitchen.

With a spacious, clean dining room plus group tables and private rooms, it also works well for family gatherings and group meals.
